Seriously though that sounds damn good.

2.5 gallons water
.5 gallons apple juice (if you don’t want apple flavor, sub water)
1 cup salt
1 cup brown sugar
Handful of peppercorns
3-5 bay leaves

This is a 24 hour brine. Cut the salt if you want ot go longer. Conversly, up it if you want shorter (don’t go more than a 1/2 cup up though).

Rinse after brining. Air dry a day if you can (helps crisp skin).

I then smoke the turkey at 225 with apple wood, until the thigh registers 150, then i crank the smoker to 400 to crisp the skin. Looking for 170-175 in the thigh.
