For those of you not in the know, Tilapia is usually the fish of choice at cheap restaurants (like Denny’s or something like that) because it’s pretty difficult for the kitchen to fuck it up. It’s also dirt cheap.

Tilapia are mostly not ocean-going. I’m not sure where that came from. It’s the fish that was first farmed somewhere in the range of 4000 years ago. Swordfish can be terrible if anything goes wrong between being caught and being eaten.
